Nicholas, great article. We had our first great experiences with cider (see-dray) in the basque region of Espana. The waiter poured it over out of his raised arm into the glass that he was not looking at! 90% hit the glass giving it more carbonation.

We do of course help out, but it's complicated when tied to reporting because there's a strong principle in journalism that you don't compensate people for interviews; the fear is that then you incentivize people to tell you compelling stories that you want to hear. Yet how can you not help when someone is in trouble? That's a difficult path to navigate, but one I've been navigating for decades.
Mr. Kristof frequently told readers how they could help, and many, many of us did. But I hope you can see his point about not compensating people for telling their stories. That would most certainly lead unscrupulous folks to make up all sorts of misfortunes in the hope of getting freebies. It would undermine everything Mr. Kristof has dedicated his career to doing.
